PASTAS & PIZZAS
(FUNGHI FEAST!): Come and join us for a mushroom feast. We'll start with a Bruschetta dei Funghi (Brown button, Shitake & King Trumpets sautéed and finished with Champagne vinegar & fresh tarragon) and we'll follow up with a Pasta al Boscaiolo (Assorted Crimini & baby mushrooms sautéed with olive oil and garlic and slow-cooked in a sauce of hand-crushed San Marzano tomatoes and finished with fresh mint & hot pepper)
(HAND-MADE PIZZA): Learn how to make James' very popular flat bread pizza from scratch and without the use of a electric mixer. We will make several different types of pizza, including a Margherita from Naples. Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo.
(ULTIMATE COMFORT FOOD): Learn how to make James' famous "comfort" pasta with San Marzano tomatoes, a touch of cream & hot pepper. We will follow up with a beautiful winter braise of Prather Ranch beef. The ulimate comfort food for a foggy San Francisco summer night!
(GNOCCHI NIGHT): Learn how to make beautiful hand-made potato gnocchi that is unbelievably light and fluffy. Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo & a small bonus course of James' very popular braised free-range chicken with prunes soaked in grappa.
(COOKING OF ROME): Learn how to make authentic Roman pasta alla Matriciana with beautifully cured pancetta & guanciale with San Marzano tomatoes. We will then follow up with a beautiful pork "saltimbocca" (Italian for so good it jumps into your mouth!).
(COOKING OF BOLOGNA): Learn how to make the classic Pasta alla Bolognese. This is an incredibly delicious sauce that is not as hard to make as some people think. We'll show you the secrets and also how to make gorgeous hand-made egg tagliatelle. Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo.
(TOMATOES TOMATOES TOMATOES! - Available only during August - October): This is the time of year when tomatoes are at their absolute peak! We will do James' very special & secret "Taste of Summer" gazpacho (yes, we're in the Fall but this is pure summer on your palate) followed by a beautiful Spaghetti ai Pomodori Verdi using last of the season green tomatoes. Includes a salad of heirloom tomatoes with burrata, basil & olio nuovo.
(HAND-MADE RAVIOLI): Learn how make beautiful hand-made ravioli filled with goat cheese & herbs and served with a light butter sauce. Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo.
(PASTA ALLA PUTTANESCA): Learn how to make an incredible Neopolitan puttanesca pasta with olives, capers, pine nuts, San Marzano tomatoes, white wine & hot pepper. Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo.
PROTEINS
(POLPETTINI): Learn how to make light and delicate Neopolitan meat balls with pork, beef, ricotta, egg & bread. There is a trick to making them light and we will teach you! Includes a seasonal green salad dressed with Champagne vinegar & olio nuovo.
(PERFECT ROAST CHICKEN): Learn how to roast the perfect chicken so that it is succulent & full of flavor. We will also show you how to make an incredible Caesar salad with fresh eggs. We will be using--as always--top organic ingredients from local farms.
(PAELLA CON POLLO Y CHORIZO): Learn how to prepare a beautiful & authentic Paella Valenciana. We use real "bomba" rice from Valencia, make our own chicken stock and cook layer after layer of fresh ingredients including, chicken, peppers, green beans & Spanish chorizo.
(QUAIL COOKED OVER A WOOD FIRE - $20 supplement): Join us for a very special dinner & class in which we will roast some beautiful quail (wrapped in prosciutto & brushed with "peperoncino" jelly) over a wood fire on a real Tuscan grill. Served with seasonal side dishes. Includes a green salad dressed with Champagne vinegar & olio nuovo.
(DUCK 2 WAYS - $10 supplement)): Learn how to prepare duck 2 ways. We will first braise the legs and then show you how to cook the breast so that it is perfectly succulent & moist. Served with roasted potatoes & braised greens.
